Santa Monica Boot Camp Coach Reveals 8 Secrets of The Effortlessly Thin- Part 2

To refresh your memory, I recently read a short but sweet article about the top secrets of the so called "effortlessly thin". Whether they have been thin all their lives or have found a way to lose weight and keep it off, there were some commonalities in the daily behaviors of the thin-folk that allowed them to to stay lean with "seemingly" little to no effort.

Recipe Of The Month

This tasty little dish is brought to you by Westside Adventure Boot Camp's own, Cookbook Author Meredith Phillips ( you may recognize her as

Thai Chicken and Lemongrass Soup
Prep time: 10 minutes Cooking time: 30 minutes Yields: 6 servings

Ingredients:

2 tablespoons canola oil
1 medium onion, thinly sliced
½ cup sliced bamboo shoots
6 cups low-sodium chicken broth
2 tablespoons fish sauce
2 stalks lemongrass, cut in half and bruised to release flavor
1 tablespoon finely minced ginger
2 skinless, boneless chicken breasts, thinly sliced
1 can light coconut milk, shaken
Juice of 1 medium lime

Set a Dutch oven or large saucepan over medium heat and add the oil. Saute the onions until translucent and soft, 4 to 5 minutes. Add the bamboo shoots and sauté another 2 minutes. Add the chicken broth, fish sauce, lemongrass, and ginger. Simmer 15 minutes to let the flavors meld.

Add the chicken and let simmer 3 to 4 minutes, or until just cooked through. Stir in the coconut milk and lime juice, remove the lemongrass stalks, and serve hot.

Variations:
For a spicier soup, experiment with whole or sliced Thai or Serrano chilies, removing the seeds and membranes. Add brown basmati or jasmine rice
